Redefine Pro Bratwurst with Mashed Potatoes and Peas
Ingredients
- 400 g Redefine Pro Bratwurst sausages
- 850 g (30oz) medium potatoes
- 70 g baby peas
- 50 g chopped scallions
- 60 g butter
- ½ tsp. salt
- A pinch of coarsely ground black pepper
- A pinch of chili flakes
- ½ tsp. sweet paprika
Method
PREPARATION
- Prepare the mash. Peel and cube the potatoes. Place them in a pot and cover with water. Bring the pot of potatoes to a boil and then lower the heat to a simmer. Cook the potatoes till they are soft and are easily pierced with a fork.
- Strain the potatoes and return them to the pot. Carefully cook them over low heat, for a few minutes, to dry out. Remove from heat and pass through a food mill of mash by hand.
- Stir in 30 g of butter and season with salt, to taste. Keep warm.
- In a sauté pan melt the remaining 30 g of butter, add the pepper, chili and paprika and cook for one minute.
- Add the peas and continue to cook till the peas have softened. Remove from heat and keep warm.
- Prepare the Redefine Pro Bratwurst sausages according to the instructions on the package.
- Plate the sausages on a bed of mash. Spoon the peas with their sauce on top and serve.
