New-meat Currywurst with Belgian Fries
Redefine Bratwurst with fries
Ingredients
- 400 g Redefine Pro Bratwurst sausages
- 850 g (30oz) medium potatoes, peeled
- 3 tbsps. Ketchup
- 1 tbsp. curry powder
- Oil for frying
Method
PREPARATION
- Prepare an ice water bath in a medium bowl.
- Batonnet the potatoes and soak in the ice water for half an hour.
- Fill a pot with water and a teaspoon of salt. Bring to a boil.
- Remove the potatoes from the ice water bath with a slotted spoon, and transfer to the pot on the boil. Retain the ice water bath.
- Cook the potatoes for 10 minutes.
- Strain the potatoes and shock them in the ice water bath. Strain and dry well on paper toweling.
- Fill a pot or deep fryer with oil and heat to 180° Initially fry the dried potatoes for a few minutes in the hot oil, until they start to color. Remove and allow them to drain for 3-4 minutes on absorbent paper toweling.
- Return the precooked fries to the hot oil and continue to cook till they are a deep golden brown. Remove from the oil, drain and toss with salt.
- Prepare the Redefine Pro Bratwurst sausages according to the instructions on the package.
- While the sausages cook, mix the ketchup and the curry powder in a small bowl.
- When the sausages are done, slice them in half, plate, accompanied with a side of chips. Smother with curried ketchup. Serve.
