New-meat Mexican Nachos
Redefine Pulled Pork Nachos
Ingredients
- 250g (9 oz) Redefine Pulled Pork
- 1 bag Totopos or Nacho Chips
- 10g (2 tbsps.) Coriander leaf
- 100g cherry tomatoes, quartered
- 140g (5 oz, 1) red onion, sliced
- 10g (3.5 oz, 1) jalapeno, seeded and sliced
- 1 medium avocado
- 100g (3.5 oz, 1) white onion, chopped
- 1 lemon
- 40 g (3 tbsps.) Olive oil
- 7g (1 clove) garlic, minced
- 3g (½ tsp.) smoked or sweet paprika
- 3g (½ tsp.) salt
- 1g (½ tsp.) pepper
- 1.5g (½ tsp.) cumin
- Coriander leaves
- Limes
Method
Preparation:
- Make the guacamole. Peel the avocado, place in a bowl and mash till smooth. Add the chopped white onion and juice of half a lemon (15g, 1 tbsp.). Stir to combine. Cover with plastic wrap and refrigerate till ready for use.
- Heat the olive oil in a sauté pan or skillet over medium/high heat. Add the red onion and sauté till soft and translucent.
- Add him paprika, cumin, salt, pepper, and minced garlic. Stir to combine and cook till fragrant, about one minute.
- Add the Redefine Pulled Pork, stir. Continue to cook for another 2-3 minutes, to ensure that the new-meat is thoroughly cooked and evenly coated with the seasoning. Remove from heat and keep warm.
- Place the Nachos/Totopos on a serving plate and layer with the seasoned new-meat. Scatter the quartered cherry tomatoes and the sliced jalapeno on top. Sprinkle with coriander leaf. Serve accompanied by limes and hot sauce.
